About Payson Elk Processing
Our facility was designed specifically for efficient and sanitary wild game processing. All operations are conducted indoors in a climate-controlled facility. Our plant has been inspected and approved by the Arizona Department of Agriculture. We follow all rules and regulations of the Department of Agriculture and the Arizona Game and Fish Department.
We have decades of experience in meat cutting as well as a lifetime of hunting and fishing. We hold all of our employees to the highest standards and refuse to return anything to you anything that we wouldn’t serve our family. We hire hunters who appreciate the value of your harvest.

All meat is processed boneless.
Steaks and roasts are vacuum-sealed.
Ground meat is ground through twice with or without fat added and packed in chubs.
Bulk fresh sausage is available.
Summer sausage, pepperoni and snack sticks available.
Delivery to the valley.

Hours of Operation
Open 7 am-7 pm. Seven days a week during hunting season. Closed the Thanksgiving and the day before and Christmas Eve and Christmas. There may be times the shop is unmanned for short periods but someone will always be on call to assist you during business hours.
All animals brought to our facility must have a valid tag and proof of legality as required by the Arizona Game and Fish Department. This includes: head or sex organs (udder or labia for antlerless elk).
In an effort to comply with Arizona Game and Fish Department regulations for the control of Chronic Wasting Disease we will not accept any deer, elk, or moose from out of state. Please see the Arizona Game and Fish website at azgfd.com for further details or call (623) 236-7307.
